Pago de Tharsys is a 12-hectare estate based at Requena, some 70 miles inland from Valencia on Spain’s eastern coast. The vineyards are located on the plateau above Requena, 650 metres above sea level and face south and are planted in poor sandy soil with excellent drainage. The continental climate means that summers are hot and dry and winters are cold with occasional rains. Perfect for the cultivation of the various grape varietals grown at the estate which include Macabeo, Chardonnay, Parralleda, Albariño and Xarel.O. This particular Cava is a blend of Macabeo, Parralleda and Xarel.O and fermentation takes place via Methode Champenoise before being aged in bottle for 16 months prior to release. Dry with a vivacious mousse, this makes for a perfect aperitif.
A pale straw yellow in the glass with greenish tinges. The persistent mouse carries with it notes of apricot, apple and pear. On the palate, light and fresh with a cleansing acidity leading to a lingering finish. A wonderful food wine with a creamy butternut squash soup, shrimp fra diavolo (linguine, dried chilli flakes tomatoes and capers) or a chunk of creamy Brie cheese.
